The winemaking sector, like the agri-food sector as a whole, has experienced a substantial evolution in recent decades dictated by the emergence of new needs expressed by consumers and the will of producers to guarantee a sustainable and respectful offer towards the ecosystem. The current panorama of the wine market is characterized by a wide category of sustainable wines (organic, biodynamic, vegan, natural) each of which with its own distinctive characteristics. A dynamic and varied wine market, like the current one, requires adequate analysis tools to be able to respond promptly to the needs of a highly selective and informed demand. In light of these considerations, the paper considers a particular segment of demand, haute cuisine, a sector that plays a fundamental role in the consumption of wine. Specifically, the consumption of a particular category of sustainable wine, the socalled natural one, will be analyzed. The research attempts to formulate forecasts and propose an original interpretation relating to the possible evolutions of the natural wine market in a context of sustainable production choices.

Il settore della vitivinicoltura, come il comparto agroalimentare nel suo complesso, ha vissuto negli ultimi decenni un’evoluzione sostanziale dettata dall’insorgere di nuove esigenze manifestate dai consumatori e dalla volontà dei produttori di garantire un’offerta sostenibile e rispettosa nei confronti dell’ecosistema. L’attuale panorama del mercato del vino è caratterizzato da un’ampia categoria di vini sostenibili (biologici, biodinamici, vegani, naturali) ciascuna delle quali con caratteri distintivi propri. Un mercato vinicolo dinamico e variegato, come quello attuale, necessita di adeguati strumenti di analisi per poter rispondere tempestivamente alle esigenze di una domanda quanto mai selettiva ed informata. Alla luce di queste considerazioni, il paper considera un segmento particolare di domanda, l’alta ristorazione, comparto che ricopre un ruolo fondamentale nel consumo di vino. Nello specifico verrà analizzato il consumo di una particolare categoria di vino sostenibile, quello cosiddetto naturale. La ricerca tenta di formulare previsioni e proporre un’interpretazione originale relativa alle possibili evoluzioni del mercato dei vini naturali in un contesto di scelte di produzione sostenibili.
